Food safety is a major global concern, while the increasing emergence of antimicrobial-resistant bacteria has created an urgent need for alternative approaches to control bacterial pathogens across the food production chain. Bacteriophages, or phages, are naturally occurring viruses that specifically infect and kill bacteria, offering a targeted and nature-based approach to bacterial control. This talk will introduce the fascinating history of bacteriophages, from their discovery and early applications in phage therapy to their emerging roles in agriculture and food production. The potential of phages as precision biocontrol agents will be discussed in the context of reducing reliance on conventional antimicrobials and addressing the growing challenge of antimicrobial resistance. Applications of bacteriophages across the food production chain will be highlighted, with a focus on both pre-harvest and post-harvest strategies for controlling important foodborne pathogens. Examples of our research on the application of bacteriophages in swine production to control pathogenic bacteria, including Escherichia coli and Salmonella spp., will also be presented. Finally, the opportunities and challenges of translating phage-based biocontrol from research to practical applications for agriculture and food safety will be discussed. Together, these developments highlight bacteriophages as nature’s precision tools for supporting safer and more sustainable food production.
