Agricultural and food-processing residues are renewable sources of cellulose and bioactive compounds that can be developed into ingredients and materials for food, biomedical, and personal-care applications. This work explores the recovery and use of these materials, focusing on rambutan peel, coffee pulp, bacterial cellulose produced from coconut water, and cellulose nanofibrils combined with gelatin. Rambutan peel was investigated as a source of cellulose fiber and ellagitannin-rich extract. The extract showed antioxidant activity, and its potential use in fortified bread was assessed through texture and antifungal evaluations. Coffee pulp was examined for its cellulose and phenolic contents. The cellulose microfibrils obtained from the pulp were evaluated for their interactions with different types of fat. These findings suggest potential for using coffee-pulp cellulose microfibrils as a functional food ingredient. For tissue-engineering applications, cellulose nanofibrils combined with gelatin were investigated as a scaffold material. This combination brings together the structural properties of cellulose nanofibrils and the biological relevance of gelatin, with the aim of supporting cell growth and tissue regeneration. Bacterial cellulose nanofibrils produced from coconut water were also explored for skincare and acne-gel applications. The nanofibrils had an average diameter of approximately 32 nm. In preliminary testing, the formulation showed anti-inflammatory activity and reduced Staphylococcus aureus compared with the control. Together, these studies demonstrate how cellulose and associated bioactive compounds from underused biomass can be developed for food formulation, tissue-engineering materials, and cosmetic applications. Further work is needed to optimize processing, assess safety and performance in relevant applications, and evaluate the feasibility of scaling production. This approach supports more complete use of agricultural resources while advancing cellulose-based products for health and beauty.
